Spinach, Broccoli, and Tomato Soup
While nothing can truly ever be “all you can eat”, this soup is as close as you can get. No matter how much you eat, the chances of it affecting your weight are negligible - that’s especially true if you replace the stock with fresh herbs or chilli to flavour.
Ingredients:
- Tin of Italian plum tomatoes
- Fresh spinach
- Fresh broccoli
- Chicken or vegetable stock cube, or fresh herbs/chilli to taste
- Salt and pepper to taste
Method:
Prepare the stock cube as per instructions and add to a pan. If using fresh herbs or chilli, chop the herbs/chilli and add them a pan with some water.
Wash the spinach and add to the pan also, along with a tin of tomatoes. Ensure there’s enough water to cook the spinach (it will reduce in size quite quickly), and bring to the boil and simmer. While it is simmering, cut the brocolli into small chunks and add.
Continue to simmer for further 15 minutes, then put the soup into a blender and blitz until smooth.
Personally, I like a thick soup - but if you want a thinner soup, simply return to the pan and add some boiling water and mix.
The soup is now ready to eat.
