+ Chicken and Mushroom English Muffin with Tomato and Vegetable Sauce Recipe

A day like today always surprises me. Why? Because yesterday I ate SHOCKING amounts of food - I was literally bursting at the seams - and yet I still lost weight.
So why didn’t I put on weight? How could I eat so much and still lose weight?
The reason is what I was eating.
I don’t have fancy rules for losing weight. I have three very simple rules:
1. Eat as many non-carb rich vegetables and fruit as I want.
2. Avoid fried and fat rich foods.
3. Eat other foods in moderation so that I don’t go over my calorie limit.
The first rule here is mind-blowing. It literally gives me license to eat and eat and eat and eat - as I did yesterday.
Eating veg and fruit isn’t limited to just boiling or steaming or roasting or eating raw, however. For example, look at how I used the theory of “unlimited veg” in yesterday’s meal:

An English muffin (146 calories) sliced in half and toasted, then each half covered with a layer of chopped mushroom, chicken breast (half a breast on each half of the muffin), and another layer of chopped mushroom. Individually wrap in foil and roast in the oven for 30 minutes, along with sliced chopped eggplant. The mushroom was made from a large pack of mushrooms, blitzed in a blender.
While that was cooking, I put a little olive oil in a pan (your body still needs a little bit of oil daily) with garlic, chilli, and sun-dried tomato paste and then fried mushrooms, pak-choi, and okra in the oil. Then I added a tin of tomatoes, cooked the lot, and blended.
When the muffins and eggplant were cooked, I put them on a plate and covered with the vegetable sauce.
By using vegetables in this manner, I was able to pad out a single muffin, chicken breast, and little olive oil to make a superbly filling dish using my “unlimited vegetables” theory. Compare eating the above with eating just a muffin with a cooked chicken breast inside. No comparison, is there?
It astounds me the way we can literally eat and eat and eat, yet still lose weight. Even last night I was thinking “Nah.. that’s way too much food.” But it wasn’t. And the theory still holds true.
Eat unlimited - still lose weight.
