Oven Pasta Arrabiata

March 17th, 2008 · No Comments

Garlic
Chilli or chilli pasta
Mushroom
A little olive oil
Tomato puree
Tinned tomato
Cherry tomato
Stock cube - eg, beef
Pasta - eg, fusilli

Slice the mushrooms and add with crushed garlic to a pan containing a little olive oil. Fry until the mushrooms are cooked, then add the chopped chilli, tinned tomato, and tomato puree. Melt the stock cube in a little water and combine into the mix, and stir all. While cooking cut each cherry tomato in half of quarters.

Place pasta in the bottom of an oven proof dish, and cover with the arrabiata sauce. Ensure all the pasta is covered, stirring in a little extra water if need be. Layer the cut cherry tomatoes on top and put in the over for about 25-30 minutes, 250 degrees.

Note: For your weight, the only things you need to watch here are the olive oil and amount of pasta. Ensure to only use a little olive oil, and about about a handful of pasta per person. You can vary the recipe by adding other vegetables, such as eggplant or asparagus, is desired.
